Canon Background
Gilgamesh is ExDeath's right-hand man, and the heroes of FFV have to fight him several times. It is not known why or how Gilgamesh came to serve the main antagonist of the game, but he does so, even with a little reluctance. When Bartz, Lenna, and Faris chase after Galuf to the "other" world, Gilgamesh captures them and holds them hostage, forcing Galuf to fight him and rescue them. Gilgamesh runs off before he can be defeated, and the four encounter him on the Bridge, making this the legendary "Battle on the Big Bridge".
Later on, ExDeath puts up a barrier around his castle. When the Warriors of Light and Xezat attempt to break the barrier, Gilgamesh attacks their ship along with his companion Enkidu. Once again, he is defeated and thrown into the ocean.
The party fights him yet again in ExDeath's castle, where he transforms into his six-armed true form and pulls out his ultimate weapon: The Excalipur. Unfortunately, this weapon is not very ultimate, and ExDeath gets angry at Gilgamesh's incompetence and banishes him to the Void.
When the party finds Gilgamesh here, they learn that he despises ExDeath, and he simply walks away, no longer wishing to fight the Warriors of Light. He wishes to leave the Void and return to the real world, but unfortunately, that is rather hard to do. In a rather dramatic scene, though, Gilgamesh appears before the party in their battle against the rather difficult enemy Necrophobe. Wishing to aid the party in their quest to defeat ExDeath, Gilgamesh sacrifices himself to destroy Necrophobe.
However, it is possible that Gilgamesh did not sacrifice himself. Necrophobe, first of all, is an optional boss, but it is advisable for the party to fight him if they want a save point before fighting ExDeath. Also, if the party is able to defeat Necrophobe in a certain amount of time, Gilgamesh does not show up and sacrifice himself. The timeline where Gilgamesh sacrifices himself, though, unfortunately seems to be considered the "true canon".
Do not fear, though. Gilgamesh comes back again and again in several other Final Fantasies, usually as an optional boss or a summon. His appearance does change, though, with each time.

- Appearance - Gilgamesh is indeed a man of mystery, as FFXII describes him as. He is clad in red robes and armor, hiding much of his striped face. His head is adorned with horns. The most significant thing about him, though, is his multiple arms. At first, Gilgamesh appears as a normal, two-armed man, but later he reveals his true form as a six-armed knight. In each of his hands he holds a different weapon.
- Personality - Gilgamesh is one of the most memorable characters in Final Fantasy history. His overconfidence more often than not makes for a somewhat humorous scene in not just FFV, but in most of the games he appears in.
He considers himself a brilliant and brave swordsman, even though he often runs away from the battles he's in. He often mistakes the Excalipur, a sword that does horrible damage, for the legendary Excalibur, and wonders why it doesn't do much damage.
While Gilgamesh may be a villain, he does have a heart. When learning about Galuf's death at the hands of ExDeath, he does seem upset. Later when ExDeath finally banishes him to the Void, he realizes what a jerk ExDeath is and aids the party in their quest to defeat him, even going so far as to sacrifice himself. It just seems, though, that Gilgamesh likes to fight and show off his sword techniques, as shown in the other FF games. Perhaps he's just misunderstood...
